Mesilla
Mesilla is the postcard pin southwest of Las Cruces: adobe walls, the old plaza, the Basilica of San Albino, and a courthouse where Billy the Kid was sentenced to hang. It dates a certain crowd well. Double Eagle and La Posta supply candlelit margaritas and green chile; the plaza itself does the rest, especially at golden hour or during Cinco de Mayo and Day of the Dead. Tradeoff: it is touristy and small, so locals run out of fresh material fast. Best deployed as a deliberate evening rather than a default. Park once, walk everywhere, dress one notch up.
